Sustainable sourcing and zero-waste practices

Jaras Restaurant implements several sustainability measures:

  • Sourcing 100% of vegetables from local, sustainable farms
  • Adopting a “hyper-locavorism” approach to reduce carbon footprint
  • Implementing zero-waste cooking techniques
  • Using an Oklin composter to process over 125 kilograms of food waste daily

The composter converts food waste into natural fertilizer, which is shared with local partner farms, distributed to the community, and used in the resort’s landscaping.
