Banyan Tree Krabi has won first place in the barista mixology category and second place in the culinary competition at the Hotel Expo Krabi Go Green 2026 challenge, recognizing the resort’s commitment to zero-waste practices and locally sourced ingredients.
The winning entry, a mocktail titled “Soil to Soul,” was created by Dawadee Songprasert of Banyan Tree Krabi’s Kredkaew Bar. The drink incorporated locally grown coffee, seasonal fruits, roselle, mangosteen, natural honey, and coconut oil — all sourced from the Krabi region. Central to the entry’s zero-waste concept was the repurposing of coffee grounds and mango peels to produce a cordial, giving byproducts of food preparation a second use rather than discarding them.
“We reuse coffee grounds and mango peels to make a cordial, giving these ingredients a second life,” Songprasert said of her entry, which drew on Krabi’s natural resources and the hotel’s broader sustainability framework.
Local Sourcing and Culinary Recognition
The resort’s culinary team also placed second in the Local Taste Competition with a dish of Chargrilled Prawns with Tom Yum Emulsion, highlighting local ingredients and the distinctive flavors of southern Thai cuisine. Both entries reflect Banyan Tree Krabi’s emphasis on incorporating regionally sourced produce into its food and beverage program.
The awards build on a series of sustainability recognitions the property has received in recent years. Banyan Tree Krabi holds a Green Hotel Award Gold Certification from Thailand’s Department of Environmental Quality Promotion and received a Thailand Tourism Sustainability Award in the Health and Wellness Tourism category at the Thailand Tourism Awards 2025.
The Hotel Expo Krabi Go Green 2026 challenge aligns with broader sustainability ambitions for the Krabi province. Speaking ahead of the event, the Deputy Governor of Krabi Province emphasized the importance of qualitative tourism development alongside natural resource conservation as the region works toward becoming a recognized green tourism destination.
