Sheraton Manila Bay has announced “Sustainable Seafood Night” event, designed to showcase the principles of responsible sourcing and food and beverage sustainability. The event was set to take place on September 15th and promised an evening of culinary excellence with a four-course dinner paired with artisanal cocktails, all crafted from sustainably sourced seafood and locally grown produce.

The highlight of the evening is a specially curated menu by the Sheraton Manila Bay culinary team, emphasizing the use of ethically sourced ingredients. The event will feature three local businesses committed to sustainable practices:

  • Osdone Corp.: This local farm is a pioneer in sustainable crayfish cultivation in the Philippines, offering a fresh, farm-to-table approach to seafood.
  • Saint C: Known for its high-quality calamansi extract, Saint C aims to bring this abundant Filipino citrus fruit to a broader audience with a focus on sustainability.
  • Sula Spirits: An emerging player in the artisanal spirits market, Sula Spirits combines Filipino ingredients like coconut with modern distillation techniques and eco-friendly packaging.

Sheraton Manila Bay prioritizes sustainable seafood sourcing

Throughout the evening, attendees will have the opportunity to engage with the business owners, who will discuss their initiatives and advocate for environmental awareness in waste reduction and food sustainability. This event is not just a celebration of local talent but also a platform to highlight critical sustainable practices that are vital for the future of the Philippine food and beverage industry.

Sheraton Manila Bay is part of a growing movement in the Philippines hospitality industry to embrace sustainable principles. In the Palawan municipality, El Nido Resorts has set a reputable standard with its comprehensive sourcing, waste and energy-saving policies.

Other resorts across Asia are beginning to take such steps, as well. Most recently, three Chinese hotel giants have announced plans to transition up to 70% of their menu offerings to plant-based alternatives by 2025. This will affect more than 3,500 properties, potentially making an incredible impact.
