CSM Ingredients group is set to showcase advanced systems for egg replacement at Food Ingredients Europe (FIE) 2024, taking place November 19-21 in Frankfurt. Their Egg ‘n Easy system enables partial egg reduction in cakes and muffins while maintaining product quality and reducing costs. The solution enhances batter viscosity, supports internal structure, and ensures soft texture with appealing crust characteristics.
The company will debut Magic GLAZE FTS, an upgraded version of their premium vegan glaze that provides a golden, glossy finish to baked goods while remaining stable during freezing and thawing. Additionally, HIFOOD’s Veganeez offers a 100% plant-based solution for cold-processing sauces and dressings, particularly suitable for vegan mayonnaise production.
CSM Ingredients: Sustainable ingredient development
In collaboration with Italian company Heallo, CSM Ingredients group is also developing next-generation bakery products utilizing JAXplus, a glycemic stabilizer extracted from plant by-products. This partnership emphasizes circularity in ingredient production, aligning with the group’s commitment to enhancing human well-being and planet health through innovation.
The company’s SlimBAKE emulsion achieves a 30% fat reduction in laminated baked goods, while their E-Free margarines respond to growing demand for additive-free, clean-label products. Their FRESKO system extends bread shelf life up to 14 days using clean-label enzyme systems.
Health-focused innovations
Under their Better for You category, CSM Ingredients will additionally showcase HIFOOD’s Proteios TVPs (textured vegetable protein) and protein mixes for bakery products. Their recently launched Micro Protein, winner of the IUFoST Global Food Industry Award for “Most Innovative Process,” offers a clean-label solution for increasing protein content with minimal impact on product structure and flavor.
The company will display these innovations alongside Vitalfood by Italcanditi, their Platform partner specializing in fruit-based preparations, highlighting the synergies developed within their Ingredient-Tech Platform. These collaborations focus on enhancing nutritional profiles by reducing salt, sugar, and unhealthy fats while increasing protein and fiber content.
