Shangri-La Rasa Ria emphasizes sustainable gastronomy in Borneo

On World Food Day, October 16th, Shangri-La Rasa Ria, Borneo, commemorated its ninth anniversary by amplifying its focus on sustainable gastronomy. This initiative is in line with the Shangri-La Group’s commitment since 2014 to promote locally and ethically sourced ingredients through its “Rooted in Nature” program.

At Shangri-La Rasa Ria, this manifests through strategic liaisons with the local community, highlighting flavors specific to Sabah Borneo while focusing on its multicultural ethos. A significant on-ground illustration of this commitment is the Chef Herbs Garden, which grows various herbs and plants, including chili, thyme, rosemary, mint and lemongrass. Dishes are infused with fresh and organic ingredients grown directly from the garden.

The “Rooted in Nature” program operates worldwide, with the group’s properties establishing their own sustainable farming facilities or initiatives, from setting up herb and vegetable gardens to installing food recycling systems. In 2022, the group reported nearly 2,800 “Rooted in Nature” menu items and had 653 colleagues participating in training for the program.

In a broader operational context, the resort is committed to sustainable gastronomy in its procurement practices. The emphasis is consistently on chemical-free produce, free-range livestock, sustainable seafood, and certified organic products. 

A majority of these are procured directly from local producers, who combine traditional methods with innovative techniques, ensuring an eco-friendly approach.

Supporting the local community is another priority for the resort. Collaboration with local suppliers encompasses knowledge transfer sessions, adherence to food safety standards, and establishing a trading platform specifically tailored for local farmers. 

Environmental initiatives beyond food

Shangri-La’s ESG goals have primarily focused on reducing environmental footprints by integrating water and energy-saving measures, such as implementing rainwater harvesting and using water-saving appliances in their properties.

At Shangri-La Rasa Ria, systematic water conservation measures are directly integrated into its operations. Noteworthy is the introduction of the “aquamiser” — an innovative laundry water recycling system to reduce water consumption.
