Winnow, the AI-powered food waste measurement company, launched Winnow Foresight, a mobile-first production forecasting solution designed to help hotel kitchen teams predict guest demand and prevent food waste before it occurs. Developed in collaboration with Hilton chefs, the web app supports Hilton’s Travel with Purpose sustainability strategy by providing focused-service hotels — a segment historically lacking access to advanced food waste technology — with practical tools to reduce overproduction while managing costs and enhancing guest experience.
The forecasting approach represents a methodological shift from reactive waste measurement toward proactive overproduction prevention. Rather than quantifying waste after preparation, Foresight uses item-level AI prediction to optimize production plans, enabling kitchen teams to prepare appropriate quantities from start of service.

That’s the difference between managing waste and preventing it.”
Pilot results from Hilton properties across Europe demonstrate substantial waste reduction with concurrent operational benefits. Hampton by Hilton Budapest reduced leftover weight by 69% within six months, including 64% reduction in leftover croissants, while increasing breakfast satisfaction by 4% and reducing cost per cover by 10%.
Hilton London Croydon reduced leftover weight by 52% within five months, including 57% reduction in leftover sausage and 48% reduction in leftover scrambled eggs, freeing kitchen staff to focus on food quality rather than managing surplus inventory. Hilton Frankfurt Airport achieved 66% total reduction in overproduction weight and 5% savings on food costs.
Focused-Service Hotel Segment and Technology Access
Winnow Foresight targets focused-service hotels and other properties with lighter food and beverage operations — a segment historically underserved by advanced food waste technology. With more than 5,000 focused-service hotels globally across brands including Hampton by Hilton, Tru by Hilton, and Hilton Garden Inn, the segment represents substantial opportunity for waste reduction at scale.

Winnow and Hilton have partnered since 2017 on food waste reduction initiatives. Winnow Vision, the company’s flagship food waste measurement system, is now installed across more than 220 Hilton hotels worldwide, collectively preventing more than 5,900 tonnes of food waste, avoiding more than 7.8 million wasted meals and 13,000 tonnes of CO2 equivalent emissions.
Winnow Foresight currently operates across approximately 13 Hilton hotels in Europe, Middle East and Africa, with Hilton evaluating results ahead of potential wider rollout. The technology integration extends Winnow’s partnership beyond measurement infrastructure toward predictive systems enabling proactive operational decision-making.
